  • Sweetness is measured in terms of sucrose which is a common sugar.
  • It is a disaccharide molecule composed of two monosaccharides - glucose and fructose.
  • All the Sugars are compared with sucrose which is known as relative sweetness.
  • Sugar according to their relative sweetness are as follows:
    • Maltose
    • Dextrose (Glucose)
    • Fructose
    • Saccharin
    • Aspartame
  • Saccharin is about 550 times sweeter than sugar.
  • Aspartame is the most widely used artificial sweetener it is about 180 times sweeter than sucrose.
  • Fructose is the sweetest natural sugar.
