Alcohol (ethanol) is manufactured by the fermentation process. There are several examples of fermentation processes which we come across in daily life; souring of milk or curd, putrefaction of meat or food, preparation of vinegar or wine etc. However, the oldest and best known example of fermentation is the alcoholic fermentation (that fermentation in which alcohol is the main product). The starting material for alcoholic fermentation is sugar (e.g. glucose, fructose, mannose and galactose), generally glucose. Glucose mainly comes from two sources namely molasses and starch.
