Yeast cells have been used extensively for functional expression of eukaryotic genes because of several features. Yeasts are the simplest eukaryotic organisms (unicellular) and like E. coli have been extensively characterised genetically, easy to grow and manipulate and large amounts of cloned genes or recombinant proteins can be obtained from yeast cultures grown in fermenters (large culture vessels).
