Retrogradation can lead to Syneresis expelling water from the polymer network.

  • Syneresis is the process in which liquid comes out from a gel-like substance.
  • The reaction of retrogradation occurs when the chains of amylopectin and amylose in gelatinized and cooked starch start re-associating themselves on the cooling of the starch.

  • Gelling:
    • A gel is a sol in which the solid particles have meshed such that a rigid or semi-rigid mixture results
  • Dextrinization:
    • Dextrinization is the process involving the browning of starch foods when subjected to dry heat
    •  It is defined as the breakdown of starch into dextrins.
  • Annealing:
    • ​Annealing is a heat treatment process that changes the physical and sometimes also the chemical properties of a material to increase ductility and reduce the hardness to make it more workable.
